The history of this recipe has created great stress and strain in my life. I had had this recipe for years, prior to marriage even, and had never made it until this year. After making it, pronouncing it delicious, I promptly lost the recipe. I was able to recreate most of it from memory and 2 trial batches. Just as I was preparing to put it in the computer and on this web site, I lost the newly recreated recipe. This is the 3rd incarnation, and I really hope it’s correct. 2001 update - the recipe is correct and yummy! I’ve made some additional changes to make it healthier.

Combine the following ingredients in a bowl:
2 cups flour
1 cup whole wheat flour
1/2 cup toasted wheat germ
1 tsp baking soda
2 tsp baking powder
1 tsp salt
1 1/2 cups brown sugar


6 Tb extra light olive oil (or melted butter)
1 1/3 cups orange juice
4 tsp grated orange peel
2 eggs
2 cups chopped cranberries
1 cup chopped walnuts

Beat the oil and eggs together in a bowl. Whisk in orange juice and grated orange peel.  Combine with dry ingredients, cranberries and walnuts. Stir just until combined.  Bake in a 350 degree oven for 50 to 55 minutes. Cool in pan for 10 minutes, and then finish cooling on a rack.  Bread is best if it is wrapped and served the next day - particularly tasty when toasted.
